Translation
Meaning must be removed. Aristophanes [writes]: "some of the firebrands must be pulled out and some of the meats skimmed off." They do this when the pan is bubbling, taking out [some] of the meats.

Ὑφελκτέον τῶν δᾴδων· ἀντὶ τοῦ ὑφαιρετέον. Ἀριστοφάνης· ὑφελκτέον τῶν δᾴδων καὶ ἀπερυστέον τῶν κρεῶν. τοῦτο ποιοῦσιν, ὅταν παφλάζῃ ὁ λέβης, ἀφαιροῦντες ἐκ τῶν κρεῶν.
